You probably have many of these &#8220;C&#8221; spices on hand for holiday cookies. With this soup, you&#8217;ll pull them out more than once a year!<\/em><em>\u00a0 Customize the spice combination a<\/em><em>nd v<\/em><em>ary the flavors t<\/em><em>he next time you make it. \u00a0It&#8217;s high in protein and fiber, low in fat and calories, and<\/em><em>\u00a0doesn&#8217;t really need salt. Enjoy!<\/em><\/p>\n<p>1 small onion, chopped (use pre-diced onions to save time)<br \/>\n1\/4 cup chopped red pepper, optional<br \/>\n1 tablespoon olive oil or coconut oil<br \/>\n1 cup red split lentils, rinsed well<br \/>\n4 cups water (or broth)<br \/>\n1 teaspoon ground coriander<br \/>\n1 teaspoon cumin<br \/>\n1\/4 teaspoon cayenne and\/or chili pepper (more to taste)<br \/>\n1\/4 teaspoon cardamon<br \/>\n1\/4 teaspoon cloves<br \/>\n1\/4 teaspoon cinnamon<br \/>\nOptional: 1\/2 teaspoon of sea salt<\/p>\n<p>Saute onion (and red pepper) in oil in a thick-bottomed pot until soft and translucent, about 5 minutes. \u00a0Meanwhile, rinse the lentils in a sieve. \u00a0Add the rinsed lentils to the translucent onion in the pot alnog with 4 cups of water. Bring to a boil, and add spices.
